Old recipe - originally made in about 1980.
Still a favorite with everyone who's tasted it.

Water: | Hard water in Surrey, so: 0.5 teaspoon magnesium sulphate 1 teaspoon calcium sulphate 1 teaspoon lactic acid |

Boil: | 60 max minutes | SG 1.153 | 2 gallons | |||||
3 lb. Light malt extract 2 lb. Dark malt extract 2.5 lb. Cane sugar |

Add 1 cup strong tea to boil. (Adds tannins which you would get if this were matured in wooden barrels.) Note: sugar not added to boil but dissolved in bucket separately. |

Hops: | 2 oz. Fuggles (4.5% AA, 60 min.) 2 oz. Kent Goldings (5.0% AA, 60 min.) |

Yeast: | Originally made with Edme Home Brew yeast. Also good with Boots and Gervin ale yeasts but now find Safale S-04 best. |

Log: | If available, add 5 drops hop oil at racking. | |||||||
Carbonation: | Approx 2oz white sugar added to 5 gallon barrel. |
