Midnight Lager

First attempt to clone Sam Adams Black Lager!

Type: Extract w/grain Size: 2.25 gallons
Color:
61 HCU (~25 SRM)
Bitterness: 22 IBU
OG: 1.054 FG: 1.014
Alcohol: 5.1% v/v (4.0% w/w)
Water: Filtered water
Grain: 8 oz. Caramel 40L
8 oz. Carapils
4 oz. Cara Munich II
3 oz. Carafe III dehusked
Steep: 30 min. Heat up to 160 deg and watch temp as it cools and add heat to keep above 150 deg. Bounce tea bag often to maximize yield!
Boil: 45 minutes SG 1.096 1.25 gallons
2.75 lb. Light malt extract
Hops: .75 oz. Hallertauer Mittelfruh (5% AA, 45 min.)
.25 oz. Hallertauer Mittelfruh (5% AA, 5 min.)
.5 oz. Spalt (6.75% AA, 5 min.)
Yeast: Nottingham Ale yeast, keep on cooler side to get lagering effects.
Log: Start fermentation inside at 65-70 deg, then move to ice chest and add ice to keep cool. Try to keep 57 deg for 10 days.
