Puttanesca IPA

Time to clean out the fridge and cook up an IPA in the spirit of the puttanesca pasta sauce
( Puttanesca is a sauce made in the old Italian brothels, and is typically made up of all of the leftovers. It is characterized as very hearty and full of flavors)

Type: All grain Size: 4 gallons
Color:
9 HCU (~7 SRM)
Bitterness: 95 IBU
OG: 1.066 FG: 1.008
Alcohol: 7.5% v/v (5.9% w/w)
Water: Tacoma, WA water: nothing added, nothing needed.
Grain: 8 lb. American 2-row
1 lb. American crystal 20L
Mash: 80% efficiency
Infusion mash, 155 degrees for 60 minutes. 2.5G mash water, sparge with 3G 180 degree water.
Boil: 60 minutes SG 1.053 5 gallons
Hops: 1 oz. Northern Brewer (8.5% AA, 60 min.)
.5 oz. Nugget (12% AA, 60 min.)
1 oz. Northern Brewer (8.5% AA, 30 min.)
.75 oz. Hallertauer (4.25% AA, 15 min.)
.25 oz. Saaz (aroma)
Yeast: Recaptured WL001
Log: Very good efficiency ~ 80%
Very active fermentation for 4 days,
then active fermentation for over a week,
placed in the secondary for 4 days,
then finally placed in the very cold garage (night time temps around freezing) for a few more days.
Carbonation: Forced CO2, 10 lbs.
Tasting: Great IPA. A bit heavy (not an easy summer time IPA), extremely drinkable (I can knock back a couple pints easily).
