North Corner Wheat

I got this recipie from North Corner Brewing Supply in Bellingham, WA and modified it a bit. The guys there are really helpfull.

Beer: North Corner Wheat Style: American Wheat
Type: Extract w/grain Size: 5 gallons
Color:
8 HCU (~6 SRM)
Bitterness: 11 IBU
OG: 1.045 FG: 1.012
Alcohol: 4.3% v/v (3.3% w/w)
Water: Just used filtered H2O
Grain: 1.5 lb. Wheat malt
4 oz. Dextrine malt (Cara-Pils)
Steep: Steep grain at 150° for 35 minutes, resume heat to 170° and remove grain. Proceed to full boil, add extract, hops.
Boil: 60 minutes SG 1.075 3 gallons
6 lb. Light malt extract
1tsp Irish Moss. I added 3 Tbs of orange peel at the final 5 minutes with the finishing hops.
Hops: 1 oz. Hallertauer (4.25% AA, 60 min.)
1 oz. Hallertauer (aroma)
Yeast: Wyeast 1056 American Ale Yeast
Log: Great initial fementation, let sit in fermenter for 10 days, then bottled right away. No need to really secondary ferment with this beer,
and the advantage of this beer is that it is a fairly quick beer to make. After a week the beer was good enough to drink,
but two weeks after bottling it was great. Fermentation temp was between 68°-70°.
Carbonation: 3/4 cups corn sugar added to carboy.
Tasting: The orange peel gave the beer a very subtle zest when done. More could be used to get a more noticable flavor. Not much hop aroma/flavor, only slightly bitter. Good wheat flavor/aroma.
I might try lemon peel next time or even a hint of lime to achieve a "dos equis" quality.
Next time I might add 1lb wheat malt and 1lb extract to get some more body.
Also some more hops(1oz chinook?) to aid in head retention and a little more bite.
This is a great, easy to make light beer beer with plenty of flavor. Perfect for a beginner. Very delicious!
