Dark Spruce Ale

It's a spruce tree wrapped in dark alcoholic goodness - perfect for brewing in the summer and drinking in the winter!

Type: Partial mash Size: 5 gallons
Color:
132 HCU (~43 SRM)
Bitterness: 16 IBU
OG: 1.042 FG: 1.010
Alcohol: 4.2% v/v (3.3% w/w)
Water: .5 tsp gypsum in strike water and sparge water
Grain: 2 lb. American 6-row
4 oz. American crystal 145L
.75 lb. Belgian Special B
.75 lb. American chocolate
2 oz. American black patent
Mash: 65% efficiency
Dough in at 145, let sit at 138 for 30 minutes. Add boiling water to bring temp to 145 for 30 minutes. Mash out at 167, hold for 10 minutes.
Boil: 60 minutes SG 1.094 2.25 gallons
3.5 lb. Dark malt extract
Add 1 - 1.5 gallons of spruce tips (preferably new growth) with boiling hops and boil for 60 minutes.
Hops: 1.5 oz. Fuggles (4.75% AA, 60 min.)
Yeast: Used a blend of yeasts from a starter prepared a day in advance.
