Das Holzfaeller Altbier

This is the best beer I've ever made. It's based on Al Korzonas'
Altbier recipe. Der Holzfaeller means "The Lumberjack". It's a
tip of the hat to Monty Python.

Type: All grain Size: 5 gallons
Color:
22 HCU (~13 SRM)
Bitterness: 59 IBU
OG: 1.049 FG: 1.012
Alcohol: 4.7% v/v (3.7% w/w)
Grain: 8 lb. 8 oz. Weyermann Dark Munich
1 lb. Weyermann Melanoidin
Mash: 70% efficiency
Single-step mash at 158° F.
Boil: 60 minutes SG 1.035 7 gallons
1 tsp Irish Moss added with 10 minutes left in the boil.
Hops: 2.5 oz. Spalt (6% AA, 60 min.)
Yeast: Starter of Wyeast #1338 European Ale
Log: Primary ferment at the low end of the ale range (low 60s F) if you can. When the primary fermentation has completed, "lager" it at fridge temperatures for three weeks or as long as you can stand it.
Tasting: Absolutely wonderful.
