Water: 1 Tbs 5.2 Mash stabilizer, 1 tsp gypsum
Grain: 7 lb. 8 oz. American 2-row
6 oz. American chocolate
4 oz. American black patent
6 oz. Flaked oats
1 lb. American crystal 60L
8 oz. American crystal 90L
Mash: 75% efficiency
Mash grain in 3.5 gallons of water at 155° F for 60 minutes. Continuously sparge with 170° F water to collect 6.5 gallons.
Boil: 60 minutes SG 1.041 6.5 gallons
1 tsp Irish Moss at last 15 minutes of boil
Hops: 1 oz. Kent Goldings (5% AA, 60 min.)
Yeast: Danstar Nottingham yeast in a 1 qt starter.
Carbonation: 2.0 volumes Keg: 6.8 psi @ 40°F
