Alcohol: 7.2% v/v (5.6% w/w)
Water: I use water with medium hardness for this recipe. Ca at 50 ppm, alkalinity at 152 ppm.
Grain: 11 lb. American 2-row
1 lb. Wheat malt
.5 lb. American crystal 40L
3 oz. Roasted barley
Mash: 80% efficiency
Mash grain with 14 quarts water and hold at 150 F for 45 minutes.
Boil: 90 minutes SG 1.069 6 gallons
1 lb. Honey
Ten minutes before end of boil add 0ne pound honey, 2 teaspoons ground ginger and 4 cinnamon sticks and irish moss.
Hops: 1.5 oz. Cascade (6% AA, 60 min.)
.25 oz. Cascade (6% AA, 15 min.)
Yeast: Wyeast 1028 with starter at one liter.
Carbonation: medium carbonation
