Salty Dog Pale Ale
This is a Tasty Pale Ale with just the right amount of bitterness. This is my House Ale.

Water: | I use Citric Acid to adjust my pre-mash water to 6.0 ph.
Grain: | 12 lb. American 2-row 5 lb. American Munich 1 lb. Dextrine malt (Cara-Pils) .5 lb. American victory |
|||||||
Mash: | 81% efficiency | |||||||
I mash this in with 24 quarts of 164 degree water to achieve 153-154 degress f.
Boil: | 60 minutes | SG 1.037 | 14.32 gallons
Add two tablets of whirlfock to help the beer clear.

Yeast: | I use Fermentis SafAle US-05 but Nottingham works well as well.
Log: | I keep this brew in the primary for two weeks. It normally ferments down 1.010 or 1.008 at 67 degrees F. I transfer to secondary after 14 days and leave it there for 21 days. Then either bottle or keg. If cask conditioning then leave at room temperature for 4 more weeks. It is well worth it.
Carbonation: | 2.6 volumes | Keg: 13.4 psi @ 40°F
Tasting: | This beer has a nice citrus flavor and a complementary malt profile. It is the beer that I make most often. If you are a fan of American style Pale Ales you'll love this one. |
