Can-Am Maple Ale

my coworker says he can get some good GradeC (the dark stuff) Maple Syrup straight from the North Canadian woods...

Type: Extract w/grain Size: 5 gallons
Color:
12 HCU (~8 SRM)
Bitterness: 21 IBU
OG: 1.057 FG: 1.015
Alcohol: 5.5% v/v (4.3% w/w)
Water: none - use bottled mineral water
Grain: 1 lb. American crystal 10L
1 lb. Dextrine malt (Cara-Pils)
Steep: 150degF for 1 hour
Boil: 70 minutes SG 1.115 2.5 gallons
3 lb. Light malt extract
3 lb. Wheat extract
1.5 lb. Maple syrup
add maple syrup for last 5 minutes of the boil
Hops: 1 oz. Kent Goldings (5% AA, 60 min.)
1 oz. Kent Goldings (5% AA, 30 min.)
1 oz. Kent Goldings (5% AA, 5 min.)
Yeast: American Pale Ale yeast
Carbonation: prime with 2/3 cup maple syrup + 2-3tbs corn sugar & bottle
Tasting: This was good - full bodied and wheaty, but with a little maple aroma in the glass if you stick your nose all the way in. Next time, I'll use less finishing hops.
