A nice strong ale. Could be a bit more hoppy.

Grain: | 8 oz. American crystal 40L 2 oz. Flaked barley |

Steep: | Steeped 40°L crystal malt (coarsely cracked) and 2 oz. flaked barley in 1 gallon of water at 170°F for 15 minutes in a small pot. Strained grains out and added liquid to brewing vessel (5 gal stainless steel) and rinsed grains with additional 1 gallon boiling water. |

Hops: | 2 oz. Cascade (5.8% AA, 60 min.) 1 oz. Kent Goldings (5% AA, 15 min.) 1 oz. Willamette (4.5% AA, 15 min.) 1 oz. Kent Goldings (aroma) |

Yeast: | Wyeast 1098 (British ale) with no starter. | |||||||
Log: | 7 days in primary, racked to secondary with 1 oz. Kent Goldings. 2 weeks in seconday, aged 2 additional weeks in bottle. |

Carbonation: | Batch primed with 3/4 cup corn sugar. | |||||||
Tasting: | Next time I'd up the A.A.% a bit to get the bitterness into the 50-60 IBU range. |
