Ben's Odiazepine - Delirium Tremens Clone

Color:
13 HCU (~8 SRM)
Bitterness: 24 IBU
OG: 1.077 FG: 1.004
Alcohol: 9.4% v/v (7.4% w/w)
Water: Filtered, softened city water (similar to Munich)
Grain: 5 lb. German Pilsner
.5 lb. German Munich
.5 lb. Belgian aromatic
.5 lb. Belgian biscuit
Steep: Specialty grains for 15-20 minutes at 150°-200°
Boil: 90 minutes SG 1.055 7 Imp. gal.
3 lb. Light malt extract
3 lb. Light dry malt extract
2 lb. Belgian candi sugar
All at 15:
Irish Moss
15 g Ginger
15g Coriander
15 g Paradise
Hops: 1 oz. Styrian Goldings (5.5% AA, 60 min.)
1 oz. Saaz (3.75% AA, 15 min.)
Yeast: WLP 575 and S-04.
Log: Brewed on 9/29/09.
Primary: basement room temp for one week at 67°
Secondary: two weeks days lagering at 34° (+/- 2°)
Bottle: three weeks at at 72°
Storage: Basement 67°
Carbonation: I brewed a big Belgian dark with three pounds of sugar last year (Stan Hieronymous' recipe) which was kind of a Good, The Bad and The Ugly situation, meaning each bottle tasted different. Some were good and alcoholic, others were crappy and awful. I may have put too much dry malt in this one . . .
