dough in 10 liters at 50C - Target 40C - 15 min
add 7 liters at 97C - Target 62C - 20 mins
heat to 72 (10 mins) - stay 30 mins at 72C
collect the wort
sparge with 13 liters at 91C - 20 mins
Boil: 60 minutes SG 1.083 21 liters
Hops: 20g Perle (8% AA, 60 min.)
10g Hallertauer Hersbrucker (5% AA, 15 min.)
10g Saaz (aroma)
Yeast: T-58 starter
