Alcohol: 6.8% v/v (5.3% w/w)

Grain: 2 lb. American 2-row
1 lb. American crystal 20L
Steep: Add grains to 10.5 L (7 large PS) cold water, bring to 160, shut burners, start timer. Steep at 155-160 for 30 min.
Boil: 60 minutes SG 1.120 3 gallons
7 lb. Light dry malt extract
1 Tbsp Irish moss @ 5 min
1 Tbsp Gypsum @ 5 min
Hops: 1 oz. Centennial (9.0% AA, 60 min.)
1 oz. Challenger (7.0% AA, 60 min.)
.5 oz. Crystal (3.8% AA, 45 min.)
.5 oz. Columbus (14.2% AA, 45 min.)
.5 oz. Glacier (7.4% AA, 45 min.)
.5 oz. Crystal (3.8% AA, 30 min.)
.5 oz. Glacier (7.4% AA, 30 min.)
.5 oz. Columbus (14.2% AA, 15 min.)
1 oz. Crystal (aroma)
Yeast: Safale US-05 dry yeast (rehydrated)
Log: Brewed 4/1/10
Temp = 70 deg
Ferment for 8 days
Rack to secondary with oak chips for 14 days
