Alcohol: 4.8% v/v (3.8% w/w)
Water: No Water Treatment
Grain: 240g Munich Malt
180g Melanoidin Malt OR Muntons Amber
240g crystal 20L OR Weyerman CaraRed
240g Cara-Pils
30g Chocolate OR Weyerman Carafa II
4.1kg Pale Malt
Mash: 75% efficiency
Mash at 68°C for 45 minutes. raise temp to 77°C for mash out.
Boil: 90 minutes SG 1.043 27 liters
add 1 tsp. Irish Moss at 15 minutes
Hops: 25g Willamette (5% AA, 90 min.)
11g Fuggles (5% AA, 20 min.)
11g Fuggles (aroma)
Yeast: WLP001, pitch slurry of 1.25L yeast starter.
Log: Ferment at 20°C untill complete (usually 7-10 days).
Carbonation: 2.2 volumes Corn Sugar: 113g for 21 liters @ 20°C
