Momweiser Revisited

My second go at an American Light Lager -- 2nd time gifting the results to my Bud-luvin' mom. Instead of trying to clone Bud Light, I'm going to do an American Light Lager the way I'd "want" one. I'm scaling down the rice from 30% to 10%, upping the IBUs, boiling 90 minutes, and slipping a little continental pilsner malt and some crystal 20 into the grainbill. Maybe I can keep improving and brewing this beer for my mom and in a few years she'll be drinking good stuff!

5 HCU (~4 SRM)
Bitterness: 21 IBU
OG: 1.040 FG: 1.008
Alcohol: 4.2% v/v (3.3% w/w)
Water: Reverse osmosis water, 1/4 tsp chalk added to mash.
Grain: 3.15 lb. American 2-row
.8 lb. Flaked rice
3.15 lb. German Pilsner
.8 lb. American crystal 20L
Mash: 82% efficiency
Add 1 tablespoon 5.2 mash stabilizer. Mash at 148*F for 75 minutes, mash out at 168*F for 10 minutes.
Boil: 90 minutes SG 1.027 9 gallons
Wirfloc tablet added @ 15 minutes 'til flameout, .75 tsp Wyeast yeast nutrient added @ 5 minutes 'til flameout.
Hops: .375 oz. Nugget (13% AA, 60 min.)
.25 oz. Saaz (5.5% AA, 10 min.)
.25 oz. Saaz (5.5% AA, 0 min.)
Yeast: Yeast cake from an Oktoberfest brewed on 9/18/10. WLP810, San Francisco Lager Yeast (the Anchor Steam strain).
