Adjust San Diego water to pH 6.0 with lactic acid.

1.00 lb. Belgian biscuit
0.50 lb. British brown
3.00 lb. American crystal 20L
1.00 lb. Dextrine malt (Cara-Pils)
Mash: 77% efficiency
Infusion Mash in RIMS @ 150° for 60 min. Mash out for 20 min @ 168°. Sparge with 168° water to collect 12 gal. of wort.
Boil: 90 minutes SG 1.062 12.0 gallons
Irish Moss at 70 min
Hops: 2.04 oz. Columbus (12% AA, 90 min.)
2.04 oz. Crystal (5% AA, 30 min.)
Yeast: White Labs California Ale. Pitch 1 liter starter at68°F.
Log: Dry Hop in secondary fermenter with 2oz. Crystal 5%AA.
