Maibock is Killing Me

After a long stretch without a brew, I'm back into it with a vengeance. Looking at the calendar, I figureed it would be a good time to start a Maibock so I can, for the first time, have a seasonal brew drinkable in season. Tried to get the alcohol up a little, thus the corn sugar. It was the only thing that didn't upset the overall lightness of this bock given the ingredients I have on hand. Thus this is sort of like my "leftover" bock.

Beer: Maibock is Killing Me Style: Maibock
Type: Extract w/grain Size: 5 gallons
Color:
15 HCU (~9 SRM)
Bitterness: 20 IBU
OG: 1.068 FG: 1.020
Alcohol: 6.2% v/v (4.9% w/w)
Water: Pre-boied water for carboy, add gypsum to boil.
Grain: .5 lb. German Pilsner
Steep: 1/2 pound of 2-row Pilsner malt in 1 gallon of cold water. Bring to boil and remove grains before adding extracts and corn sugar.
Boil: 60 minutes SG 1.113 3 gallons
3.3 lb. Light malt extract
3.3 lb. Amber malt extract
1 lb. Corn sugar
1 lb. Light dry malt extract
A pinch of Irish Moss to help make it prettier.
Hops: 2 oz. Hallertauer (4.5% AA, 60 min.)
.5 oz. Tettnanger (4.9% AA, 15 min.)
Yeast: White Labs Pitchable #WLP830 - German Lager Yeast - No starter neccessary. This stuff is great!
Carbonation: Dissolve 5 oz. of corn sugar in 1 pint of heated wort over yer trusty stove. Pitch that back into the rest of your work and mix well before bottling. This will make the overall batch more consistent.
