This was inspired by Chimay Blue, but was tweaked to have more chocolate flavor in this Belgian Strong Ale.

Mashed grains with 1 1/2 quarts water at 168° for 30 minutes, then rinsed with 3 quarts of water at 170° |

Added all DME and LME at end of boil, then let steep for 15 minutes. Next time I may try adding the DME for the last 10-15 minutes of the boil to have it "melt" in quicker. | ||||||||

Tasting: | This is a very smooth chocolatey strong ale that goes down easy. Beware as it is 9.0% ABV, and should be sipped and enjoyed slowly. |
