This was my Christmas/New Years beer. Very nice malty taste with a hint of bananas and cloves.

Mash: | 70% efficiency | |||||||
Single decoction mash. Mash in at 105 and heat to 122. Rest 20 min and decoct 2 gal thick mash. Heat decotction to 158 and rest 15 min. Boil decoction 15 min and add back. Mash at 149 for 15 min and raise to 158 for 20 min. Mash out at 168. | ||||||||

Hops: | .5 oz. Perle (8% AA, 60 min.) .5 oz. Hallertauer (4.25% AA, 30 min.) |

Yeast: | Wyeast - Weihenstephaner strain, can't remember the number. 1 pint starter - 48 hours. | |||||||
Log: | Fermented at 60-65 deg. | |||||||
Carbonation: | Bottled in 1/2 liter bottles with 1 1/4 cup corn sugar. Carbonated at 60-65 deg 3 weeks then lagered at 40 deg for 6 weeks. |
