Anton van Leeuwenhoek Ale

I wanted something really strong to sip on. This beer is named after the Dutch scientist who invented the microscope.

Color:
15 HCU (~10 SRM)
Bitterness: 36 IBU
OG: 1.110 FG: 1.036
Alcohol: 9.6% v/v (7.5% w/w)
Water: 1/2tsp of CaSo4 added
Boil: 60 minutes SG 1.092 12 liters
3kg Light malt extract
450g Belgian candi sugar
Hops: 16g NZ Super Alpha (12% AA, 60 min.)
10g NZ Super Alpha (12% AA, 8 min.)
Yeast: Gervin no.6 dried wine yeast
Log: 1 week primary
2 weeks secondary
2 weeks tertiary
Carbonation: fairly high carbonated for a strong ale
Tasting: I think I took this beer of the yeast too early, and the ambient temp was slightly too low for wine yeast, so it stopped working - hence the high F.G. Next time I would bump up the IBU's to 50-60 just to balance it out a bit more. but otherwise the taste is good! it has sweet maltiness with peach fruit flavours. The alcohol keeps you warm for a while afterwards.
