Thank you Herman Holtrop for the wonderful Rochefort 8 clone recipe. I finally had to try it. This is as good as it gets.

Log: | 18 days primary - 65F for the first 3 days then let it go. 28 days secondary. | |||||||
Carbonation: | Bottled at 3 volumes and kegged at med-high (as high as I can get it). | |||||||
Tasting: | Tremendous plum, fig, currants from malt plus lighter fruits from yeast with cloves and a little peppery note as well but not overpowering in Belgian character. Alcohol blends well and attenuation was big so that the slightly sweet finish is balanced and urges you to take another sip. Was hot for about 2 months after bottling, but now has mellowed perfectly. Fantastic brew! |
