Kölsch I

This is my first attempt at a Kölsch-style beer. I haven't
had genuine Kölsch so I don't know how it compares, but I'm
quite happy with the results. Won both the popular and
judge's votes at my club's monthly contest.

3 HCU (~3 SRM)
Bitterness: 26 IBU
OG: 1.049 FG: 1.013
Alcohol: 4.7% v/v (3.7% w/w)
Water: 1/4 tsp. lactic acid added to sparge water
Grain: 4 1/4 lb. Belgian pilsner malt
8 oz. Wheat malt
4 oz. Belgian Munich malt
8 oz. Dextrin malt (Cara-Pils)
Mash: 85% efficiency
40 min. @ 154°F
20 min. @ 158°F
5 min. mash-out @ 170°F
Boil: 60 minutes SG 1.045 3.8 gallons
1/4 tsp. rehydrated Irish Moss (15 min.)
Hops: 1 oz. Hallertaur (4.2% AA, 45 min.)
1/2 oz. Saaz (5.2% AA, 15 min.)
1/2 oz. Saaz (aroma)
Yeast: Wyeast #2565 Kölsch 16 oz. starter
Log: Brewed: 2/27/97
Fermented about 2 weeks @ 70°F

Carbonation: 2.5 oz. corn sugar
Tasting: Nice dry bitterness, pleasant aroma, pale gold with some chill-haze
that is starting to go away with age. Refreshing!
