Alcohol: 5.3% v/v (4.2% w/w)
Grain: 10 lb. German Pilsner
1 lb. American Munich
.5 lb. American crystal 10L
1 lb. Wheat malt
Mash: 60% efficiency
Protein rest @ 120F for 30 minutes. Thick mash.
Mash @ 152F for 30 minutes.
Mash out @ 168F for 10 minutes.
Sparge @ 170F for 45 minutes.
Boil: 60 minutes SG 1.043 6.5 gallons
Irish Moss @ 30 minutes.
Hops: 1 oz. Liberty (4% AA, 60 min.)
.5 oz. Liberty (4% AA, 20 min.)
.5 oz. Liberty (4% AA, 5 min.)
1 oz. Liberty (aroma)
Yeast: 2 pint yeast slurry of Kolsch brew.
Log: Ferment at 65F for 5 days.
Rack to secondary for 7 days at 65, dry hop with 1 oz. Liberty hops, polyclar on day 4.
Bottle and lager for 2 weeks at 40F.
