1 lb. Dextrine malt (Cara-Pils)
8 oz. Flaked wheat
Steep: 155 for 30 minutes sparge with 1 gallon of fresh 170 water
Boil: 60 minutes SG 1.048 6.5 gallons
7 lb. Light malt extract
Irish moss @ 15 min. to go in the boil
Hops: .25 oz. Simcoe (13% AA, 60 min.)
.5 oz. Simcoe (13% AA, 30 min.)
.5 oz. Simcoe (13% AA, 10 min.)
1.0 oz. Columbus (15% AA, 1 min.)
1.0 oz. Simcoe (13% AA, 1 min.)
1.0 oz. Columbus (aroma)
1.5 oz. Simcoe (aroma)
Yeast: WLP001 California Ale Yeast
This yeast is famous for its clean flavors, balance and ability to be used in almost any style ale. It accentuates the hop flavors and is extremely versatile.
Attenuation: 73-80%
Flocculation: Medium
Optimum Fermentation Temperature: 68-73°F
Alcohol Tolerance: High
