Pils One (P1)

The Meins' are mashing again!!

Brewer: R.W. Meins Email: meins@adelphia.net
Beer: Pils One (P1) Style: German Pilsener
Type: All grain Size: 5 gallons
Color:
4 HCU (~4 SRM)
Bitterness: 27 IBU
OG: 1.070 FG: 1.013
Alcohol: 7.3% v/v (5.8% w/w)
Water: 50% Hermosa Beach, CA tap water and 50% RO water
Grain: 10 lb. German Pilsner 1.5L
1 lb. Wheat malt (soft white gwm)
8 oz. German Munich Malt 10L
Mash: 80% efficiency
Placed grains in mash tun, poured in 2 1/2 gals water at 164 F. Temp started to drop so added two cups boiling water to raise to 154 F. Warmed oven to 170 F, placed mash tun in oven and shut oven off after 10 minutes. Temp was 154 for 20 minutes dropped and held 150 F for duration of mash (90 minutes)
Boil: 60 minutes SG 1.058 6 gallons
Added one tablespoon Irish Moss last 15 minutes of the boil.
Hops: 1.5 oz. Hallertauer Mittelfruh (4.4% AA, 60 min.)
.5 oz. Hallertauer Mittelfruh (4.4% AA, 30 min.)
1 oz. Hallertauer Mittelfruh (aroma)
Yeast: White Labs pitchable liquid San Francsico Lager Yeast #WLP810. Pitched yeast at 75 F at 8pm January 19th.
Log: Cooled wort by placing pail in bathtub w/cold water. Took about 2 hrs to cool to pitchable temp of 75F. Six days in the primary then on January 25th racked wort from primary to secondary. 22 days later bottled using 3/4 c. corn sugar. and 2 cups boiled water.
Carbonation: 2.5 volumes Corn Sugar: 3.90 oz. for 4.7 gallons @ 62°F
Carbonation appeared light after two weeks in the bottle. 4 weeks later had a nice carbonation but did not retain a head.
Tasting: Light but with a heavier bitternes than anticipated. Maybe because the secondary fermentor was at a temperature which averaged around 62 F it resulted in a "mouthier" flavor. Very drinkable and better than the store bought bottles any day!
