Mike and Dan's first attempt at an all grain beer.
Used our own homemade brew sculpture.

4 HCU (~4 SRM)
Bitterness: 51 IBU
OG: 1.065 FG: 1.004
Alcohol: 7.9% v/v (6.2% w/w)
Water: Boiled municipal water
Grain: 20 lb. German Pilsner
2 lb. German Vienna
Mash: 70% efficiency
Heat 5 gal water to 160° Add grain bring temp to 152°
Steep at 152° for 60 min
Sparge with 10 gal water at 170° - 180°
Boil: 60 minutes SG 1.049 12 gallons
2 tsp Irish moss last 15 min
Hops: 3 oz. Saaz (3.7% AA, 60 min.)
1 oz. Saaz (3.7% AA, 45 min.)
2 oz. Saaz (3.7% AA, 30 min.)
2 oz. Saaz (3.7% AA, 15 min.)
1 oz. Saaz (aroma)
Yeast: Wyeast Chez Pilsner
Carbonation: Force carbonated in kegs to 2.5 volumes
