Czesky Super Strong

This is my take on Budvar's Bud Super Strong.

Type: Partial mash Size: 5.5 gallons
Color:
6 HCU (~5 SRM)
Bitterness: 30 IBU
OG: 1.082 FG: 1.010
Alcohol: 9.3% v/v (7.3% w/w)
Water: Budvar's water is about 2° hardness. I use two parts distilled water to one part tap for the beer.
Grain: 16 lb. American 2-row
Mash: 75% efficiency
Triple Decotion Mash with 15 min rests at 98°, 125°, 170°, and 30
minutes at 150°. Mash in at 98°. Pull 40% of the volume (Decotoin)
and raise to 125° for 15 minutes, 150° for 15 min and then 160° for
15 min. Bring to a boil for 30 min. Add back to the Mash. Should
raise the mash to the next 15 min rest level. Repeat for the
remaining mash rest temperatures. For the 150° rest, rest for 30
minutes. Mash out at 170°.
Boil: 90 minutes SG 1.076 6 gallons
4 oz. Light malt extract
Hops: 1 oz. Saaz (3.75% AA, 60 min.)
1 oz. Saaz (3.75% AA, 45 min.)
1 oz. Saaz (3.75% AA, 30 min.)
1 oz. Saaz (3.75% AA, 15 min.)
1 oz. Saaz (aroma)
Yeast: WLP802 Czech Budejovice Lager Yeast
Log: I lager this beer for 200 days just like Budvar. Counting fermentation
time, this beer takes over seven months start to finish.
Carbonation: 2.4 volumes Keg: 6.3 psi @ 30°F
Tasting: All I have to say is that when I tap a keg my friends come out of the woodwork.
