Add bittering and flavoring hops as specified. Add Irish Moss 15 minutes before end of boil. In separate pot bring 3 gallons water to boil. Allow to cool. When it has cooled to between 170-150 add remaining Mt. Hood Hops in a strainer bag. Add hop tea to primary to fill balance of 16 gallons. |

Log: | Cool wort to less that 65 deg. before pitching. Primary ferment at 52 deg. Secondary ferment at 45 deg. Rack and age 1 - 2 months at 36 deg. |

Cool aged lager to 32 deg. filter and force carbonate. Allow to rest at room temp for two weeks then chill and serve. |
