This recipe is closely based on our friend Doug's CAP that we had at
the Southern CA Homebrew Festival. It was so damned good, I just had
to try my hands at it. So here's Paul's & my attempt.

SINGLE REST AT 155° FOR 90 MIN. RAISE TO MASHOUT (168), STIR CONSTANTLY. RECIRCULATE UNTIL VERY CLEAR. BE SURE TO AVOID A STUCK SPARGE, DO NOT OPEN THE OUTPUT FULL. TAKE YOUR TIME. MAIZE IS FAMOUS FOR STICKING. |
