Icehouse Clone

I had done this about 2 months ago, and it turned out great!

Beer: Icehouse Clone Style: American Light Lager
Type: All grain Size: 5 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 4 IBU
OG: 1.040 FG: 1.013
Alcohol: 3.5% v/v (2.8% w/w)
Water: tap water
Grain: 4.5 lb. Raw barley
.25 lb. American victory
.5 lb. Rice (raw)
Mash: 80% efficiency
Grain at 155° for 35 minutes, WITHOUT a bag, just let grain loose in pot stir every 4 minutes. to remove from pan use metal strainer with a piece of water polishing pad inside, pour mash thru this, will filter almost all of the "floaties" as my wife puts it, out.

grain that is left in the strainer should then be placed back in the pan with enough water to cover it, boil again for about 20 minutes, and do the same straining process.

** Be careful NOT to scorch the grain or it will become much darker **
Boil: 60 minutes SG 1.201 1 gallons
1.5 lb. Honey
Pay attention to the hops times, they are not 100% normal. at 20 minutes left add in 1tsp Irish Moss.
Hops: .25 oz. Cascade (6% AA, 60 min.)
.25 oz. Cascade (6% AA, 35 min.)
.25 oz. Mt. Hood (4.5% AA, 25 min.)
.25 oz. Cascade (6% AA, 15 min.)
Yeast: I have been culturing my own yeast for the last 2 years, so hard to say exactly but the yeast I use should be similar to WLP830. (I use the yeast I culture only when I make my octoberfest).
Log: May 17 was brewed. Fermentation temp approx (68° F)

Fermentation, I use a similar process every batch, 6 days in Primary (or until bubbles in airlock are approx 1 min apart), transfer to Secondary, add in 12-15 French Oak Chips, leave for 4 days, filter and transfer to 3rd ferminter, let sit for 3 more days, then filter into the filling bucket.
Carbonation: I experimented with a different method of priming this time, I build a "trap" for the beer (6" pvc sealed with a cap at both ends (removable)) placed the beer into this and added 2 cups corn sugar, sealed and forget for about 3 weeks. *take care when opening can make a bit of a mess (release the cap slow, and make sure it hasn't been shaken), at this point the beer has been carbonated but wasn't quite what I was after (need to play with it a bit to make sure everything gets where it needs to be). but for this batch I still went with the old standby coopers carb drop 1 / bottle.
Tasting: before adding the coopers and waiting, it tasted ok actually much like a HAMS U know first sip has carbonation, but as soon as you set it down and pick it back up it's flatter than a piece of paper.

after adding the coopers, that part was fixed.

Flavor wasn't to bad, might make a minor mod, but the neighbors that drink the commercial stuff seemed to enjoy it.
