Alcohol: 5.0% v/v (3.9% w/w)
Water: Filtered tap water for all water needs.
Grain: 13.5 lb. Czech (Moravin) Pilsner
5.5 lb. American 2 Row Pale Ale
2.25 lb. Czech Dark Crystal 60L
Mash: 85% efficiency
24 quarts water @ 168° strike temperature, add grains for a 1 step mash @ 155° for 60 minutes, mash out @ 170° for 10 minutes. sparge with 170° water for a total of 13.75 gallons of sweet wort.
Boil: 60 minutes SG 1.049 13.75 gallons
Add Irish moss last 15 minutes of boil and hops as directed.
Hops: 1.5 oz. Northern Brewer (8.8% AA, 60 min.)
1 oz. Northern Brewer (8.8% AA, 30 min.)
1.25 oz. Cascade (5.7% AA, 15 min.)
0.5 oz. Cascade (5.7% AA, 5 min.)
0.75 oz. Cascade (aroma)
Yeast: Wyeast # 2112 California Lager/Wyeast # 2035 American (New Ulm) Lager
Log: Will be fermenting at 58° with both #2112 & #2035
Carbonation: 2.6 volumes Corn Sugar: 4.32 oz. for 5 gallons @ 60°F
Force carbonate keg and bottle with corn suger.
