Pale Steam
This beer may be more of a Steam Beer than a Helles Lager, but the grain bill and the intentions keep it in the lager category.
I view this beer as a back door approach to lagering. I have a fermentation box that does a good job of keeping the temps consistently low, but I'm not sure if I'm quite up to the time committment that lagers usually require. This will be a start and probably close enough.

Log: | Ferment @ 55 degrees for 10 days. Dry Hop with 1 oz. Northern Brewer Hops Secondary @ 55F for 7 days. Polyclar on 4th day. Bottle with 3/4 c. corn sugar. Condition for 10 days (or until carbonated) @ 75F. Lager bottles @ 40F for 2 weeks. |
