Water: | Bottled spring water from local supermarket. | |||||||
Grain: | 1 lb. Flaked wheat | |||||||
Steep: | Steep flaked wheat in 3.5 US Gallons for 30 minutes between 130-170°F. Remove before boil. | |||||||
Boil: | 60 minutes | SG 1.067 | 3.5 gallons | |||||
6 lb. Wheat extract | ||||||||
Irish moss for last 15 minutes. | ||||||||
Hops: | 1 oz. Hallertauer (4% AA, 60 min.) 1 oz. Tettnanger (3.9% AA, 15 min.) |

Yeast: | White Labs WLP300-Hefe Ale. Make a starter if you must. I just pitch the tube. | |||||||
Log: | Primary ferment for 1 week. Primary will be very active. Use a blowoff tube setup, then switch to airlock when activity subsides. Dice and pasteurize 5 lbs fresh strawberries and place in secondary fermenter. Rack beer on top and secondary for 1 week. If fresh strawberries not available, use 4oz extract flavoring at bottling. Bottle and condition for at least 1 week. | |||||||
Carbonation: | 3/4 cup corn sugar boiled in 16 oz water. | |||||||
Tasting: | People that do not usually like wheat beer like this one. Fermenting aroma and flavor very zesty and banana like. Final flavor and aroma very smooth, full, and lightly fruity. One of my standard brews. |
