A Little Dunkel Weizen
This beer ended only a little dark (hence the name) since used 8oz 60L Crystal instead of plan for half chocolate - sometimes you use what you've got.

The extract was liquid wheat extract with a 55%/45% wheat to malt balance. Actually used 5.5 lbs of liquid malt. | ||||||||
Hops: | 1 oz. Hallertauer (4.25% AA, 60 min.) | |||||||
Yeast: | Wyeast 3056 Bavarian Weissen w/ 1L starter. | |||||||
Log: | As discussed, original recipe was for 4 oz. Crystal 60L and 4 oz. chocolate - would have ended up in correct color range. Simple brew, forgotten how easy liquid malt can be. Primary for 14 days. No secondary. Temp. 68-72F. | |||||||
Carbonation: | 5/8 cup priming sugar for 4 gallon batch. Could have gone with 3/4 cup. With high final gravity, worked fine with lesser amount. | |||||||
Tasting: | Definitely on the light color side for style - add the chocolate malt. Nice white effervescent head. Extremely estery - I was thinking bananas, my wife says smells like the merichino cherries and pineapple glaze on a ham. Hmm. . . it does. Wheats are not my favorite but it went over well with the light beer crowd at a neighborhood party. |
