White stallion Weissbier

I lover german weissbier & I decided to come up with my own variation!
I read that german beers are so good due to the purity laws! so I decided to stick to that & go with the authentic; WATER, GRAIN (MALT), HOPS & YEAST Approach! nothing added! except for a bit of honey! but I'm pretty sure this addition (for which I will use a local BRITISH heather honey) will make this beer unique!? I'll keep you all posted!

Type: Extract w/grain Size: 20 liters
Color:
5 HCU (~5 SRM)
Bitterness: 13 IBU
OG: 1.047 FG: 1.007
Alcohol: 5.1% v/v (4.0% w/w)
Water: I have good soft water as I live in the country!
However in hard water areas I would filter water before use! alternatively use bottled water
Grain: 500g Wheat malt
500g British lager
Steep: Steep at 60°C for 60 mins
Boil: 70 minutes SG 1.208 4.5 liters
1kg Wheat extract
100g Honey
1.5kg Light malt extract
Hops: 36.7g Brewers Gold (8.5% AA, 60 min.)
18.3g Hallertauer (4.25% AA, 30 min.)
36.7g Hallertauer (4.25% AA, 15 min.)
5g Hallertauer (aroma)
Yeast: I'm using a top fermenting wheat yeast!
Carbonation: for this one I'm using 1/2 tsp of granulated sugar per 500ml for botteling, I will leave for at least 3 weeks before drinking
