Hump's Dunkelweizen

My first dunkelweizen. Very different from all commercial examples I've tasted, yet very identifiable as a dunkelweizen. I like it a lot!

Type: Extract w/grain Size: 5 gallons
Color:
104 HCU (~36 SRM)
Bitterness: 12 IBU
OG: 1.061 FG: 1.018
Alcohol: 5.6% v/v (4.4% w/w)
Water: Publix-brand drinking water
Grain: 4 oz. American chocolate
8 oz. American black patent
Steep: Steep grains after kettle goes to burner and remove grains before water reaches boiling (200°)
Boil: 50 minutes SG 1.153 2 gallons
1 lb. Dark dry malt extract
7 lb. Wheat/Barley Malt mixed (55%/45%) extract
The liquid malt extract I used was from my homebrew store. It was unlabeled (it was one of their "on tap" syrups). The proprietor of the store told me it was about 55% wheat and 45% barley malt. The extract was darker than I expected (closer to the color of an amber extract), so I imagine it was wheat mixed with amber barley malt extract.
Hops: 1 oz. Tettnanger (3.8% AA, 50 min.)
1 oz. Tettnanger (3.8% AA, 30 min.)
1 oz. Hallertauer (5.0% AA, 12 min.)
Yeast: White Labs Liquid Yeast - Hefeweizen Ale Yeast
Log: After 1 week - re-racked (SG 1.020)
Another week - re-racked (SG 1.018) -waiting on enough bottles
After 2 more days - bottled (SG 1.018) -got 'em!
Carbonation: Standard bottle conditioning (1/2 cup of priming sugar boiled in almost 1 pint of water, cooled)
Tasting: Very wheaty. Man! does that White Labs Hefeweizen yeast taste good! Though different than any dunkelweizen I've tasted, it still tastes like a dunkelweizen to me! I find it very tasty.
