Beer for Thanksgiving. Similar to a N English brown ale but much more bitter or west coast California taste.

154°f overnight. Well agitated a few times. I always sparge with very hot water, no issues. | ||||||||
Boil: | 60 minutes | SG 1.052 | 6 gallons | |||||
1 tab Wirlflock last 10 minutes. All hyops in bags. | ||||||||
Hops: | 1 oz. Chinook (11.2% AA, 60 min.) 1 oz. Cascade (8% AA, 10 min.) 1 oz. Kent Goldings (6.4% AA, 10 min.) |

Yeast: | Regrown London Ale III with some oxygenation through shaking and a very small addition of olive oil. | |||||||
Log: | 1 week in 5 gallon keg. Hops remove3d when kegging. | |||||||
Carbonation: | natural carb to 2.3 vols co2. | |||||||
Tasting: | Beautiful deep clear glass like brown, drank before bottling. Malts covered by hopping, but soft taste. |
