Paintin the town hazelnut brown

Grain: | 13 lb. American 2-row 1.5 lb. American victory 1.5 lb. American crystal 60L 3 lb. Dextrine malt (Cara-Pils) 1.5 lb. British crystal 95-115L 4 oz. American chocolate 4 oz. Rolled oats |

Mash: | 70% efficiency | |||||||
Mash at 154° for 65 minutes. Sparge w 180° water for at least 1 hour. Collect 11 gallons of wort and start boil. |

Boil: | 60 minutes | SG 1.048 | 11 gallons | |||||
Add 1 tsp of Irish Moss at last 15 min of boil. Add the 2 oz of Williamette hops for aroma at flame out. |

Yeast: | White Labs Dry English Ale in a 2 quart starter. | |||||||
Log: | Brewed Nov 3. Tasted it when I racked it to secondary Nov 10, it tasted like a nice, malty, smooth American Brown. The 4 oz of the organic quick cut rolled oats sure adds a nice little touch of oatmeal creaminess too! I also added 1 oz (1/2 an ounce in each 5 gallon carboy) of organic hazelnut extract (Flavorganics is the brand. Got it at Whole Foods.) Not sure if the 1 oz of extract will be enough to get the hazelnut flavor through in a 10 gal batch. I do want the hazelnut to be subtle, but I want it to be there. If it doesn't come through when I taste it at bottling time this Wed(Nov 24) I'll add another oz(1/2 oz in each 5 gal bottling bucket). Plan on starting to drink these puppies Wed Dec 8! |

Carbonation: | Using 3/4 cup of Brown Sugar boiled in 2 cups of water, and added to bottling bucket. It's a 10 gal batch, and a 5 gal bottling bucket.. so do the priming w the 3/4 brown sugar for both 5 gallon buckets. |
