Alcohol: 8.5% v/v (6.7% w/w)
Water: 1 tbs 5.2 stabilizer, 2 tsp gypsum.
Grain: 14 lb. 8 oz. American 2-row
1 lb. 10 oz. Belgian Special B
Mash: 75% efficiency
148F for 60 minutes. Mash out at 160F. Sparge with 165F water to collect 8 gallons in brewpot.
Boil: 90 minutes SG 1.055 8.0 gallons
Hops: 1 oz. Chinook (12% AA, 85 min.)
1 oz. Chinook (12% AA, 45 min.)
1 oz. Chinook (12% AA, 15 min.)
1 oz. Chinook (aroma)
Yeast: White Labs 007 in a 1 quart starter.
Carbonation: Keg and force carbonate
