Steep: | Steep/Mini-mash - protein rest 135°for 30min, 155° for 45min, raise to 165° for 10 min, and drain thru strainer into wort boil pot. | |||||||

Add juice and outer peel of 2-3 oranges and/or lemons and a heaping tsp of corriander and 1/4 tsp of black pepper(crushed)to the last 3-4 minutes of boil. | ||||||||
Hops: | 2 oz. Saaz (3.2% AA, 60 min.) .5 oz. Hallertauer (4.0% AA, 45 min.) .5 oz. Hallertauer (4.0% AA, 30 min.) 1 oz. Hallertauer (4.0% AA, 15 min.) |

Yeast: | I like to use two yeasts and let them fight it out. Wyeast #1010 American Wheat and Wyeast #3056 Bavarian Wheat |
