Water: Used moderately hard (25 gr CaCO3) well water from deep limestone bedrock well.
Grain: 8 lb. 8 oz. British pale
1 lb. 0 oz. British crystal 50-60L
0 lb. 8 oz. British chocolate
Mash: 80% efficiency
Brew in a Basket method - single infusion at 152 F, with 10-min mash out at 168 F.
Boil: 60 minutes SG 1.053 6.5 gallons
1 lb. 0 oz. Brown sugar
Add brown sugar at 30 mins.
Hops: 1.0 oz. Willamette (5% AA, 60 min.)
0.5 oz. Kent Goldings (5% AA, 30 min.)
0.5 oz. Kent Goldings (5% AA, 15 min.)
Yeast: White Labs - Burton Ale
Carbonation: 3 oz corn sugar for 5 gal bottling batch.
