Alternish

Not quite a true altbier, since I don't have lagering facilities in my tiny apartment. If possible, condition in bottle (or secondary) at around 40°F for a couple weeks.

Type: All grain Size: 5.5 gallons
Color:
17 HCU (~11 SRM)
Bitterness: 36 IBU
OG: 1.055 FG: 1.012
Alcohol: 5.6% v/v (4.4% w/w)
Water: Have moved to simply SF tap water, which has worked wonderfully.
Grain: 6 lb. German Pilsner
8 oz. Belgian aromatic
4 oz. Belgian CaraMunich
5 lb. 8 oz. American Munich
Mash: 70% efficiency
Step mash for 120 minutes starting at 160°F. Finish with mash temp ~146°F.
Boil: 60 minutes SG 1.051 6 gallons
Hops: 1 oz. Hallertauer (4.25% AA, 60 min.)
1 oz. Spalt (6.75% AA, 30 min.)
1 oz. Hallertauer (4.25% AA, 15 min.)
Yeast: Wyeast 1007 German Ale Yeast
Log: Fermentation temp around 65°F
