Cavan Swamp Ale

I tried to get that toasted malt flavour. I usually toast 2-row pale malt in the oven. This tastes better.

Type: All grain Size: 23 liters
Color:
18 HCU (~11 SRM)
Bitterness: 33 IBU
OG: 1.055 FG: 1.008
Alcohol: 6.0% v/v (4.7% w/w)
Water: No water treatment was used. Just well water.
Grain: 10 lb. American 2-row
1 lb. Wheat malt
2 lb. American victory
1 lb. American crystal 40L
Mash: 65% efficiency
Infusion Mashing System. I use a William's Mash Jacket around a bucket. Water is heated to 170 degrees with a hot water element in a bucket.
Boil: 60 minutes SG 1.046 27 liters
Hops: 1 oz. Northern Brewer (8.5% AA, 60 min.)
.50 oz. Cascade (4.5% AA, 30 min.)
Yeast: Coopers dry yeast. It is always rehydrated. I used liquid yeast once and really saw no major improvement to the beer.
Tasting: Nice red hue to it. Toasty, malt flavour is evident. I would like to use more victory malt, but was told no to.
