Marty's Howling Mad Bitter

This was my first all grain bitter - and it was outstanding - A must for any bitter fan

Type: All grain Size: 10 gallons
Color:
44 HCU (~20 SRM)
Bitterness: 30 IBU
OG: 1.065 FG: 1.012
Alcohol: 6.9% v/v (5.4% w/w)
Water: Use gypsum as you usually would
Grain: 19 lb. American 2-row
3 lb. British crystal 50-60L
8 oz. British chocolate
8 oz. Flaked barley
1 lb. Flaked wheat
Mash: 75% efficiency
Mash at 122F for 15 minutes, raise temp to 145-155F for 90 minutes
Boil: 75 minutes SG 1.059 11 gallons
Boil for 15 minutes then follow hop schedule add irish moss for last 20 minutes of boil
Hops: 2 oz. Cascade (6% AA, 60 min.)
1 oz. Fuggles (4.75% AA, 30 min.)
1 oz. Kent Goldings (5% AA, 10 min.)
Yeast: Use yeast starter with white labs WLP005 British Ale yeast
Log: Primary Fermentation 4-7 days
Secondary Fermentation 15-20days
Bottle Condition for at least 30 days
