4 oz. American chocolate
1 lb. Raw wheat
1 lb. Belgian CaraMunich
Mash: 77% efficiency
Single step infusion mash:
Hold grains @ 155ºF for 60 minutes
Sparge out @ with 9.5 Gallons @ 170ºF
Boil: 60 minutes SG 1.053 13.5 gallons
1.5 lb. Honey
Add 3 tsp. Irish Moss @ last 15 minutes of boil
Hops: .5 oz. Northern Brewer (7.2% AA, 60 min.)
1 oz. Chinook (12.5% AA, 60 min.)
1 oz. Cascade (6.5% AA, 30 min.)
.5 oz. Northern Brewer (7.2% AA, 30 min.)
1 oz. Cascade (6.5% AA, 5 min.)
