Brown Bag Brown Ale

This is a simple all grain brown ale that has a good chocolate flavor and sweet finish. This is a complex flavored brown ale despite the simple grain bill.

28 HCU (~15 SRM)
Bitterness: 24 IBU
OG: 1.045 FG: 1.010
Alcohol: 4.5% v/v (3.6% w/w)
Water: Burtonized water
Grain: 6 lb. American 2-row
.5 lb. Wheat malt
1 lb. American crystal 40L
.25 lb. American chocolate
Mash: 80% efficiency
Mashed in 2 1/2 gallons at 155F for 60 mins. Mashed out at 168 for 10 minutes. Sparged to yield 6.25 gallons of wort.
Boil: 90 minutes SG 1.038 6 gallons
1 oz irish moss for 20 min boil
Hops: 1 oz. Willamette (5% AA, 60 min.)
.5 oz. Fuggles (4.75% AA, 15 min.)
Yeast: Wyeast 1084 used for complexity.
Log: Ferment for 5 days at 65F. Transfer to secondary and condition additional 7 days at 60F.
Carbonation: Prime with 2/3 cup corn sugar for light head. Let condition for 3 weeks prior to serving.
Tasting: Excellent brown ale. Great tawny body with red tint and small but lasting head. Body is rich with chocolate malt aroma coming through. Sweet finish and slight hop finish in aftertaste. A great session pint.
