Grist ratio: 1.1 qt/lb Heat 4 gallons mash water to 166°F. Add grains and maintain temperature of 153°F for 60 minute rest. Heat mash to 168°F for 10 minute rest to mashout. |

Yeast: | Make 1/4 gallon starter at 1.040 gravity using light DME several days in advance. Pitch White Labs WLP820 Octoberfest/Märzen Lager Yeast. |

Log: | Start fermentation at 60°F for 24 hours. Ferment in primary at 54°F for 3 weeks. Transfer to secondary and rest at 60°F for 1 day. Ferment in secondary at 45°F 1 week. Gradually lower temperature and lager at 35°F for 7 months. |
