Used a decoction mash. Mash in at 130°F, 1.4:1 water to grain, rest 20 min. Pull thick decoction (~2.5gal). Decoct and return to mash, should bring mash up to ~154. Rest for 60-90min (until conversion is complete). Then drain ~2gal of liquid wort and boil for mash out. |

Log: | Note that actual hopping is different from hop schedule listed. All hops are whole hops. The "20min" addition are actually First Wort Hops, added to kettle as runoff begins from lauter tun. The "10min" hops are actually added directly into the mash tun with the grain (pellets would be preferred for this) The "aroma" hops are actually dry hops, added to secondary for 4 weeks. |

Tasting: | My kind of beer, over the top hops backed up by big malt. Crystals are fun hops. |
