Water: | Bottled spring water from supermarket. If your tap water can compare, mineral-wise, with the water in "Jolly Olde", then use that. Chlorine removed with charcoal filter, of course. | |||||||
Grain: | 1.5 lb. American crystal 20L | |||||||
Steep: | Steep grains @ 150-170°F for 30 min. Remove before boil. | |||||||
Boil: | 60 minutes | SG 1.091 | 3.5 gallons | |||||
6 lb. Light dry malt extract 12 oz. Molasses |

1-3 tbsp each gypsum and Burton salts to boil. 1 tsp Irish moss @ 15 minutes before end of boil. | ||||||||
Hops: | 1 oz. Northern Brewer (8.5% AA, 75 min.) 1 oz. Challenger (8% AA, 20 min.) 1 oz. Challenger (aroma) |

Yeast: | White Labs WLP013 - London Ale. For less perceived sweetness, use WLP007 - Dry English Ale. | |||||||
Log: | Primary for 1 week. Secondary for 1 week; 2 weeks if you have more patience and want a clearer beer. | |||||||
Carbonation: | 3/4 cup corn sugar boiled in 16 oz water added to bottling bucket. | |||||||
Tasting: | Not exactly Bass Ale, but in the neighborhood. Right next door, I believe. Bass has a little more hop bite and is more "crisp" and lager-like. Small changes in the hop schedule and in aging, both secondary fermentation and bottle, would help this be a better clone. However, I like it just the way it is and will continue to brew it as is. |
